There are definitely times when I would like to change the value of Strike, Pressure, CC74, Release within the MIDI out or instrument module while I am playing in real time as these parameters are affected by the string dynamics and where those values are set determines how the sound responds. Assigning a controller to them currently takes over the output, not the setting value itself. And I still would love more that 9 assignable global controllers. As always, thanks for listening.

I assume you mean MG3?
If you want to affect the values and still use the string trigger input, I would suggest you go with assigning your controller via the modulators handles, rather than directly to the Modules inputs. Have you tried that?
Sorry yes MG3. That doesnât really do what I am asking either. What I want to do is have a controller assigned to set the parameter level but still have the string envelope control the destination, not the controller directly controlling the destination.

So the way it works now is you set Strike, Pressure, etc to a certain value and that will set how much the string envelope affects the parameter. With some instruments (particularly Eagan Matrix Micro or other EH instruments) they are very much programmed to respond to pressure. On lower settings of pressure in MG3, the sound is played very differently that if the pressure setting is set high or max, which plays the sound closer to a typical MPE controller. I will try to make a video at some point this weekend and post to make this clearer.
I donât have to rely on a fixed setting for these values, I can affect them in real time, but I âll wait for your description of the actual problem, to see so that I am not misunderstanding you.

Yes, this is why I suggest you use the Modulators handles instead of connecting your controller directly to the MIDI OUT Pressure or CC74. That way you affect the string envelope information rather than override it, and as a bonus you also get to keep the polyphonic nature of the pressure envelopes/CC74 envelopes that MG3 provides.
Put a modulators module before the instrument or MIDI OUT module, and connect the wires to the MPE parameter you wish to control (pressure or CC74) and connect your pedal to the Modulator handles. But this was what I described in the video, so I am not sure this is what you are looking for?
Sorry about that, I only tried connecting the min value which works exactly like connecting directly to pressure in the MIDI out module. Connecting to max work as intended. Although this now takes up another slot in the chain and I already need more of those. 
I will work with this for now and hopefully it will be enough to do what I am looking for. Thanks for sticking with me @LoFiLeiF.
