Is it possible to use several instruments at the same time by playing them in different octaves?
And is it also possible to turn the synthesizer faders by pressing certain notes on the guitar?

Playing instruments with different octaves it’s possible.
You have three chains so you have three instruments (VST).
Under MIDI Machines after you click on an empty chain slot, look for Transposer, here you go.
On your second question, if I am not wrong, MIDI Guitar 3 responds to CC not to notes.
Can you elaborate on what you are trying to achieve?
